Ingredients:

1 Roaster Chicken

1 Fresh Orange

1 L Chicken Stock

10 Cloves Fresh Garlic (Crushed)

2 White Onions (Rough Chop)

2 Shallots (Rough Chop)

1 oz Olive Oil

10 Cherry Tomatoes

10 Sprig Fresh Thyme

3 Sprig Fresh Rosemary

2 Tablespoons Smoked Paprika

1 Tablespoon Fennel Seed

1 Tablespoon Black Pepper

Salt To Taste

Prep Time: 10 - 15 minutes

Cook Time: 2 hours

Preparing your ingredients:

  1. Season chicken with salt, paprika and pepper then rub with olive oil. Set aside for 1 hour at room temperature.

  2. Slice orange into round slices, Crush 10 garlic cloves, peel and roughly chop 2 white onions and 2 shallots.

Cooking:

  1. PreHeat oven on bake to 400 F.

  2. Place onions, shallots, garlic, orange slices and herbs into the centre of a roasting pan. Place chicken onto vegetables in the centre of the roasting pan and add chicken stock.

  3. Bring to a simmer on the stove top and wrap with tin foil to cover. Place into oven and cook for 2-3 hours.

  4. Remove tin foil and cook until internal temperature is 370 F.

Rest for 15 minutes and serve.

Orange Roast Chicken

The Charlie Burger

Ingredients:

1 Lb Fresh Ground Beef

1 Shallot (Minced)

2 Cloves Fresh Garlic (Minced)

5 Sprigs Fresh Parsley (Minced)

2 Tablespoons Grainy Mustard

1/2 Tablespoon Paprika

Salt to taste

Pepper to taste

Prep Time: 10 minutes

Cook Time: 12 minutes

Preparing your Ingredients:

  1. Mince 1 shallot, 2 fresh cloves of garlic and 5 stems of parsley.

  2. Using a mixing bowl, add all ingredients and form into burger patties.

  3. Set patties in the fridge for 1 hour to chill before cooking.

Cooking:

  1. Preheat grill to 450 F.

  2. Put the burger on the grill.

  3. Cook on each side for five minutes.

  4. Rest for 5 minutes and serve.

Country Steak with Salsa Verde

Ingredients:

1 Rib Eye Steak

3 Cloves Fresh Garlic (Crushed)

6 Sprig Fresh Thyme

2 Sprigs Rosemary

1/2 Teaspoon Smoked Paprika

3 oz Tallow

Pepper to taste

Salt to taste

Prep Time: 5-10 minutes

Cook Time: 5-10 minutes

Preparing your Ingredients:

  1. Pat steak dry with paper towel and set onto a rack.

  2. Season with salt, paprika and pepper on both sides.

  3. Crush 3 garlic cloves on a flat surface.

  4. Rub herbs and garlic into the steak (place on top after).

  5. Cover and keep at room temp for 1 hour.

Cooking:

  1. Preheat grill to 500 F.

  2. Grill on each side for 2-3 minutes, flip twice on each side.

  3. Rest for 5-10 minutes.

Preparing your ingredients:

  1. Crush 3 cloves of garlic on a flat surface.

  2. Season lamb chops with salt and pepper on both sides and rub with herbs and garlic.

  3. Allow to marinate for 1 hour at room temperature.

Cooking:

  1. Bring a skillet to medium high heat and add oil.

  2. Sear lamb chops on both sides until golden brown.

  3. Rest for 5 minutes.

Lamb Chops with Salsa Verde

Roasted Potatoes

Ingredients:

4 Potato (Wedges)

4 Fresh Garlic Cloves (Crushed)

4 Sliced Proscuitto

4 sprig Rosemary

6 sprig Parsley

3 oz Olive Oil

3 Tablespoons Grainy Mustard

1 oz Balsamic Vinegar

2 oz Parmesan (Grated)

Pepper to taste

Salt to taste

Prep Time: 5-10 minutes

Cook Time: 30-40 minutes

Preparing your Ingredients:

  1. Cut the potatoes into 6-8 evenly cut wedges.

  2. Peel the 4 garlic cloves and crush them how we did in recipe 1.

  3. Grate around 2 oz of parmesan.

Cooking:

  1. Bring a skillet up to medium heat and add oil, potatoes, garlic and rosemary.

  2. Cook potatoes until golden brown on both sides.

  3. Heat oven to 375 F and bake for 15 mins until the potatoes are tender.

  4. Push the potatoes to one side and lightly brown the prosciutto in the hot oil (set aside after).

  5. Finish in skillet by adding grainy mustard, balsamic vinegar, parsley and parmesan.

Potato Gratin

Cream Infusion:

Ingredients:

6 oz Heavy Cream

2 Shallots (Rough Chop)

3 Cloves Fresh Garlic (Crushed)

6 Sprig Fresh Thyme

8 Black Pepper Corns

2 oz Butter (Un-salted)

Prep Time: 30 minutes

Cook Time: 30 minutes

Preparing Your Ingredients:

  1. Roughly chop 2 shallots.

  2. Crush 3 cloves of garlic.

Cooking:

  1. Add shallots, garlic, thyme, butter and pepper corn into a small pot.

  2. Cook on low heat until the butter turns golden brown.

  3. Add cream and simmer on low heat for 30 mins.

Potatoes:

Ingredients:

4 Potatoes (Thinly Sliced)

4 oz Mozzarella Cheese (Shredded)

4 oz Bread Crumbs

4 sprig Fresh Thyme

6 oz Cream Infusion

Preparing your ingredients:

  1. Thinly slice 4 potatoes.

  2. Shred 4 oz mozzarella.

Cooking:

  1. Heat oven to 315 F.

  2. Place potatoes into a mixing bowl and season to taste with salt, pepper and thyme.

  3. Stack potato slices into a roasting pan as evenly as possible and pour cream infusion over top.

  4. Cover with mozzarella cheese and bread crumbs.

  5. Bake for 1 hour (or until potatoes are tender.

  6. Broil on low until golden brown and serve.

5 Cloves Fresh Garlic (Crushed)

10 sprig Fresh Thyme

2 oz Olive Oil

1 Tablespoon Paprika

1 Tablespoon Turmeric

Preparing your ingredients:

  1. Cut cauliflower into medium bite size pieces and add to a mixing bowl.

  2. Crush 5 cloves of garlic.

Cooking:

  1. Heat oven to 425 F.

  2. Combine cauliflower, garlic, thyme, olive oil, paprika, and turmeric into mixing bowl and season with salt and pepper.

  3. Lay ingredients flat onto a parchment lined baking pan.

  4. Bake for 10-15 mins to soften cauliflower. After, broil on low until golden brown and serve.

Roasted Cauliflower

Ingredients:

1 Bunch Rapini

3 Cloves Fresh Garlic (Minced)

1 Shallot (Minced)

1 Chili Pepper (Crushed

2 oz Olive Oil

4 oz Water

1 oz Lemon Juice

Pepper to taste

Salt to taste

Prep Time: 5-10 minutes

Cook Time: 5-10 minutes

Preparing your ingredients:

  1. Peel and Mince 3 cloves of garlic and 1 shallot.

  2. Crush 1 chili pepper.

Cooking:

  1. Add olive oil, garlic, shallots and chili pepper into a medium low frying pan. Cook until ingredients are golden brown. Add Rapini and toss into mixture.

  2. Bring pan to medium high heat and season with salt and pepper.

  3. Add water slowly to steam the rapini - cook until tender.

  4. Finish with lemon juice and serve.

Spicy Rapini

Sauces

Salsa Verde

Ingredients:

1/2 Bunch Fresh Parsley (Rough Chop)

1/2 Bunch Fresh Mint (Rough Chop)

5 Cloves Fresh Garlic (Minced)

1 Lemon (Juiced/Zested)

1 Chili Flake (Crushed)

Pepper to taste

Salt to taste

500 ml Olive Oil

Prep Time: 5 minutes

Preparing your Ingredients:

  1. Roughly chop the parsley and mint.

  2. Peel the 5 garlic cloves and mince them finely.

  3. Wash the lemon. Cut the lemon in half and juice it, remove any seeds.

  4. If using whole dried chilies, crush them into flakes with your hands or a mortar and pestle. Otherwise, measure out about 1 tsp of pre-crushed flakes.

Combine in a Mixing Bowl:

  1. Add the chopped parsley, mint, minced garlic, lemon juice, and crushed chili flakes to a medium-sized mixing bowl.

  2. Pour in the 500 ml (2 cups) of olive oil. The oil acts as the base, binding the flavors and giving the salsa its signature texture.

Season to Taste:

  1. Start with 1/2 tsp salt and 1/4 tsp black pepper. Stir everything together with a spoon or whisk until well combined.

  2. Taste the salsa. Adjust the seasoning by adding more salt, pepper, or chili flakes as needed. If it feels too sharp, add a bit more olive oil; if too bland, a splash more lemon juice.

Dredging

  1. Place roughly 2 oz’s of flour into a shallow dish or plate.

  2. Press the cutlet lightly into the flour covering all sides evenly.

  3. Gently shake and/or tap the pork to remove any extra flour.

Mincing

  1. Prep the ingredient (peel, trim, or wash as needed).

  2. Rough chop into smaller pieces.

  3. Rock the knife over the pieces to chop finely.

  4. Gather and repeat until evenly minced.

Notes

Deglazing

  1. Cook food in a pan to create browned bits (fond).

  2. Remove food and excess fat, leaving fond behind.

  3. Add a liquid (wine, broth, or water) to the hot pan.

  4. Scrape the bottom with a spoon to loosen fond and mix into the liquid.

Crushing

  1. Prep the ingredient (ex: peel garlic cloves)

  2. Put the garlic under the side of a chef's knife

  3. Hit the flat of the blade with the heel of your hand to crush.
